Tomato Processing Plant - Sauce, Ketchup, Paste

We can setup tomato processing plant on turnkey basis where fresh tomatoes will be processed to manufacture tomato puree/ketchup, tomato concentrate and tomato paste. Plant comprises following sections:

RECEPTION SECTION:

Fresh tomatoes would be received at reception section and passed on to the fruit washing grading section. Tomatoes from reception will be washed in washing section to remove outer dirt and foreign matter from the fruit skin. Washed tomato would be feed to the inspection cum sorting conveyor where unwanted, damaged tomatoes would be separated out manually.

PROCESSING AND JUICE EXTRACTION SECTION:

Washed graded tomatoes would be passed on to the fruit juice extraction and processing unit. From fresh tomatoes the juice will be extracted out in juice extraction system. The outer skin, seed and fiber of fruits would be separated out from extraction machine and then disposed manually. Extracted juice is passed to the heat treatment to avoid the quality degradation.Again it is fine pulped in Pulper cum finisher to get finished juice.This juice will go for further processing to juice concentrate to concentrate it to 12 Brix for tomato puree, 14 Brix for tomato ketchup or 28-30 Brix for tomato paste.

Machinery to make tomato Ketchup from Tomato Puree/Paste from Aseptic Bag in drum

Tomato paste at 30/32°Brix Hot Break type is being pumped from aseptic storage tanks or from 200 L

aseptic bags-in-drums into the first mix tank. Drinkable/softened water is being added in a volume such to reduce the solids content down at 15 –16°Brix. The quantity of paste is controlled by a weighing station where the drums are placed.

In a separate tank the sugar syrup preparation takes place. Sugar powder is added by a warm screw conveyor and pre-warmed water is fed and controlled by magnetic flow meter.

The two products are mixed in the tank up to a concentration of 50/55°Brix and then sent to a storage tank previous filtration through paper filters.

Aseptic tomato paste of 28-32° Brix is mixed with RO water to dilute 15-16 °Brix.

Other ingredients are mixed into standardization tank

All mixed pulp with ingredients is preheated into tube in tube pre-heater.

Preheated pulp is passed through homogenizer.

Homogenized pulp is pumped to sterilizer, holding cooling for pasteurization.

Sterilized pulp is deaerator in vacuum deaerator further sent for filling section [temp – 95°C] into glass

bottles/pet bottles.

The filling can be done by bottle filler, can filler, pouch filler, sachet filler.

All these filled bottles, cans, pouch; sachets are to be transferred through sterilizing & cooling

conveyors.

Equipments for tomato juice making /production line

Same varieties of tomatoes or aseptic tomato paste are used to make tomato juice.

Standard production procedure is used to make tomato juice through refiner of 0.4 mm perforation hole size.

Standard sterilizer, holding & cooling is used for standard pasteurization procedure.

Hot break system is recommended for more viscous products. The HB product is used for ketchup and

different sauces.

Cold break system is recommended for less viscous products. The CB is mainly used for triple

concentrate paste at 36-38° Brix.

Tomato washing requires 3 times water with respect to input capacity of tomato in Cu M/hr.

Sorting conveyors are used for removing the damaged tomatoes, & green leaves.

The sorted tomatoes are chopped by a hammer mill or special mono block screw pump.

The chopped tomatoes pulp is preheated in tube in tube pre-heater 65 to 75 °C.

Pulper & refiner are used to separate seed, skin,

Tomato Processing Puree and Ketchup Plant Setup:
Tomatoes are continuously unloaded into tomato unloading and washing unit. Then Tomato will be sent to washing unit where the washing takes place by means of water jet and air jet. The manual washing operation can also be takes place for small scale processing by using concrete washing tank. Washed tomatoes are then transferred to sorting table where the tomatoes (damaged/ rotten) that will be not accepted in the line, must be removed manually in the sorting table.

Washed and graded tomatoes are then transferred to fruit crusher where tomatoes will be crushed to form the slurry. This slurry is directly put into the "Hot / Cold Break System" where it is heated to 65-700C or 950C in hot break system for the enzymatic inactivation. After this operation the slurry is transferred to Pulper through suitable pump for separating the pulp and waste. The separated tomato seed, skin and waste is collected in a hopper and discharged through screw conveyor. The pulp obtain is called puree.

The refined tomato juice from Pulper cum finisher is then fed to the double effect vacuum evaporator to be concentrated by boiling at low temperature under vacuum to preserve the organoleptic characteristics of the tomato. For batch type small scale processing this refined juice is fed to double jacketed steam kettle.

Final concentrated tomato puree at 14 Brix / tomato paste at 30 Brix coming out from evaporator/kettle would be further used for Pasteurization in tubular pasteurizer and cooling at 45-500C for filling in drums.

Tomato Ketchup or Sauces or Puree:
Normally tomato ketchup is being produced from existing tomato paste or puree during the off season, rarely is produced on-line from fresh tomatoes.

Tomato paste at 30°Brix /Tomato puree at 14 brix cold /hot break type is being taken from its 50L /200 L drum and unloaded into the puree unloading tank. It is then pumped by a lobe pump as per required feed rate to formulation tanks for tomato ketchup preparation. Drinkable/softened water is being added in a volume to make it desired formulation.

Other ingredients as per the formulation are prepared separately in tanks and then added to formulation tanks for uniform mixing. Sugar Syrup, Vinegar, Salt etc are prepared and added to formulation tank according to volumes specified by the recipe. Then add spices and essential oils according to the recipe and mix again. Product recirculation is done for proper blending of product. Continuous agitation is provided by agitator for uniform blending of different ingredients of tomato ketchup. The final formulated mixture (ketchup) can now be pumped through a high pressure homogenize to tubular heat exchanger - Pasteurizer in order to pasteurize it at 90-950C.

Both solutions ensure the fast tomato pulp heating in short times.

 

Function Suitable for preheating of Tomatoes before juice extraction.

The raw inspected tomatos are crushed in the mill and get collected in the bottom tank. The crush is then circulated through the heat exchanger for preheating up to required temperature. After achieving the required temperature, the product is discharged to the Pulper for juice extraction. This process is required for the following - - Deactivating the enzymes, which are likely to be generated. - Getting good colour and maximum recovery. Better quality of the product. (Ranging Operating temp. from 85 to 100 DegreeC).
